Consume Yourself: Soy Dog Reuben Sliders

Soy Dog Reuben Slider


In my last post, Consume Yourself: My 350 Calorie Turkey Reuben, I promised a recipe for a vegetarian version of the Reuben. Today I’m going to fulfill that promise.

Since Kerri and Michelle are both vegetarians, they are always coming up with creative ways of turning non-vegetarian dishes into meatless ones.

Their version of the Reuben features sliced Smart Dogs and sweet pickle chips – perfect for the Reuben-loving vegetarian.



– 3 Lightlife Smart Dogs Veggie Protein Links

– 1 tbsp Olive Oil

– 6 tbsp Sauerkraut

– 2 oz. Swiss Cheese (about 6 rectangular slices, cut into squares)

– 12 Slices of Rubschlager Rye Cocktail Bread

– 12 Sweet Pickle Chips

– 6 tbsp 1000 Island dressing

**This recipe yields 6 sliders.



Gather ingredients.

Soy Reuben Slider Ingredients


Slice soy dogs into quarters. (4 pieces per dog.)

Cut Up Soy Dogs


Pour oil into frying pan.

Cook soy dogs in pan on medium heat until slightly brown on each side.

Browning Soy Dogs


Remove soy dogs and place to the side.

Put sauerkraut in pan, warm on light heat.

Heating Sauerkraut


Lay out slices of bread on baking pan. (We used toaster oven tray.)

Rye Bread On Tray


Put 3 cheese squares on 6 of the bread slices. (The bottom halves.)

Cheese On Bread Slices


Place 2 pickle chips on top of the cheese on each slice.

Pickle Chips


Place 2 pieces of Smart Dog on top of the pickles.

Adding The Smart Dogs


Scoop a tablespoon of sauerkraut onto each sandwich.

Pour a tablespoon of 1000 Island dressing onto each sandwich.

Pouring 1000 Island Onto Sandwiches


Top off each sandwich with a slice of bread.

Place sliders in oven (or toaster oven) and cook at 350 degrees for about 10 minutes or until bread is toasty.

Toast Sandwiches


Remove from toaster and devour!
