Last week, I was feeling lazy and didn’t feel like making something elaborate for dinner. I knew one thing was for sure, I wanted some sort of comfort food with veggies and lots of cheese.
So I gathered my ingredients and whipped up a dish that Jessica now loves for me to make her. In her honor, I decided to call it Sissy’s Favorite Cheesy Steamer. I hope it’ll make you jump for joy just as much as it makes Jessica.
WHAT YOU NEED:
– 15 Baby Carrots
– 3 Red Potatoes
– 3/4 (or 9 oz.) of a bag of Eat Smart Broccoli Florets
– 4 oz. White Mushrooms, sliced
– A generous sprinkle of Green Turtle Lucayan Spice Blend
– 7 oz. Extra Sharp Cheddar, shredded
Bring 3/4 inch of water to boil in a large pot. (I started with a 3-quart pot, which I ended up having to upgrade to a 6-quart pot because it wasn’t big enough.)
Chop the carrots into small slices.
Place the chopped carrots into a steamer basket.
Cut the red potatoes into thin slices, then cut the slices in half.
Put the potato slices into the steamer basket with the carrots. (Sorry for the fuzzy picture!)
Carefully set the steamer basket into the pot of boiling water. Add the broccoli florets into the basket.
Gotta love how colorful it’s starting to look!
Add the mushrooms to the steamer basket.
Place the lid on the pot and allow the veggies to steam cook on medium-high heat for 12-15 minutes, or until the veggies are tender.
Once cooked, carefully pour the veggies into a strainer to drain the excess water. (Emphasis on the careful part; it’s very hot! I accidentally burned my arm on the pot myself – not fun!)
Once drained, place the veggies back in the pot.
Add the seasoning to the veggies to your liking, I prefer to sprinkle mine very generously!
Add the shredded cheddar.
Stir together the contents of the pot well.
Place the lid back on the pot for a few minutes, until the cheese is melted.
Once the cheese is melted, give the veggies one good stir to finish.
Plate up and enjoy!
This dish is great because it’s simple and delicious. It’s also versatile, since you make it with whatever veggies you’d like.
