All our lives, we’ve been told that breakfast is the most important meal of the day. Well, it’s true. A protein-filled breakfast will help to keep you fuller longer and give you enough energy to breeze through the morning.
Kerri and I like to start the day with homemade Egg and Cheese Breakfast Sandwiches. Our recipe is simple, quick and contains enough protein (25 grams) to keep us satisfied until lunchtime.
WHAT YOU NEED:
– 3 Eggs
– A splash of Milk
– 4 slices of Food for Life 7 Sprouted Grains Bread
– 1 cup of fresh Spinach
– 2 oz. Sharp Cheddar Cheese (about 8 rectangular slices)
– Olive Oil Cooking Spray
**This recipe makes 2 sandwiches.
Add eggs and a splash of milk together in a small bowl.
Break up spinach with your hands and also add to bowl.
Stir spinach into the egg mixture.
Spray frying pan with cooking spray and place burner on medium heat.
Add egg mixture.
Leave in pan until the bottom starts to cook.
Flip the egg, omelette-style, forming a circular shape.
Once the egg is completely cooked, cut in half with spatula.
Arrange the bread slices on baking tray.
Place the egg onto two of the bread slices.
Then add the cheese slices on top of the egg.
Place in oven (or toaster oven) on 350 degrees for about 5-10 minutes, until cheese is melted and bread is toasted.
Assemble and enjoy!
For extra protein, you can always add your favorite breakfast meat to the sandwich. We prefer Morningstar Farms Original Sausage Patties on ours.
If you’re not usually a breakfast eater, hopefully this recipe will inspire you to become one!
