Consume Yourself: Buffalo Chicken Dip

Buffalo Chicken Dip

 

Last week, America celebrated its birthday on the 4th of July. It was a day filled with family, friends, fireworks, beer and of course, good food. My parents and I attended a star-spangled gathering in Ft. Lauderdale, where we feasted on assorted holiday fare, including my famous Buffalo Chicken Dip.

This zesty mix of three cheeses, hot sauce and chicken will surely help to start your next party off right! With only 5 ingredients, it’s also quite simple to prepare.

 

WHAT YOU NEED:

– 8 oz. of Cream Cheese, softened

– 8 oz. of Sharp Cheddar Cheese, shredded

– 12 oz. Blue Cheese dressing (1 jar)

– 2 tbsp Hot Sauce

– 2 Chicken Breasts

 

LET’S BEGIN:

Gather ingredients and preheat oven to 350 degrees.

Boil water.

Place the uncooked chicken into the boiling water. Let it boil until fully cooked.

Place cooked chicken into pasta strainer.

Rinse chicken in cold water until cool enough to handle.

With clean hands, shred up cooled chicken and squeeze out excess water.

Set shredded chicken aside.

Place pre-softened cream cheese into a large mixing bowl.

Add hot sauce to bowl.

Mix together cream cheese and hot sauce. (The softer the cream cheese, the easier it will be to combine. Placing the cream cheese in the microwave for a few seconds will help to soften it.)

Add 1/3 of the shredded cheddar to the mixture and combine.

Add the blue cheese dressing to the mixture.

Finally, add the shredded chicken to the mixing bowl and stir until fully incorporated.

Spoon the mixture into a baking pan.

Spread dip evenly within the pan.

Sprinkle the remainder of the shredded cheddar on top of the dip.

Place in oven and cook for about 45 minutes or until cheese is bubbly.

Take the dip out of the oven and enjoy! The dip is best accompanied with tortilla chips or celery and carrot sticks.

Like many of our recipes, this dip is very versatile. For my vegetarians, Kerri and Michelle, I make it with chopped up shrimp. If you’re not a fan of blue cheese, you can always substitute ranch dressing.

However you make it, the people will love it and all of its cheesy goodness.
